How long is the process of baking a scene such as jonny's interiors?

About as long as it takes to render a frame. Baking in kray is way faster than in lw.

this means that an interior that took 1H to render could be baked in less than 1H, and then re-render a camera path ( no moving objects or lights )

The resulting render time could be under a minute withour reflexions...

?? true?

Baking should be done without any reflexions or refractions right?
An then adeed later to the baked scene.... ?

Yes. Some people uses baked GI in PIM (poetry in motion) to do realtime rendering.

happy to hear again that "some" people works with PIM....
I would like to never ear about this soft ! :evil:
