Fresnel fx can be done with gradients, check the attached surface for good chrystal glas.

The sunlight looks ok but the sky is like an evening sky, increase it 2-4 times more.

Indeed much improvement compared to your first images. What strikes me now is you wineglases that looks like frosted/plastics. I suspect you have used specularity or Diffuse at high values but glas have almost no diffuse at all. Make sure it's off. Keep us updated of how it goes.

DOF itself will not be faster but Global illumination and blurred reflections are areas where Kray shine.

I would like to add that the fact you see "steps" is because you use adaptive mode for your light source. If you use Min/max at exactly the same values 2-2, 3-3 and so on, the end result will be grainy but probably more appealing in the case of very long and soft shadows.

When inverse square falloff is enabled, the falloff distance OR light intensity is the exact same thing!. In nature there is no such thing as falloff distance. That's just a computer terminology. /Silverlw

I dont use any lights at all, only an HDRI mapped on a sphere surrounding my objects i want to lit. You CAN use imageworld if you want but then you need to use lightmapping instead of photonmapping. Here is the scene again and i have included the hdri.

Good initiaive! Where are all monster modellers, character animation, special fx, illustrators?
