always nice !

how do you do to have surfaces so detailed?
With denoising, mine are often too smooth and I can not seem to increase the detail.

He use pre-processing Node system.
For Denoiser use FSAA G3 Box 0.6 - it will make less aggressive denoiser. Suggested is Box 0.5. Using 0.7 will reduce denoise effect near zero.

There is no secret knowledge here.
Basically, it's a combination of color with difius, reflection, reflection blur.
Skillful mixing with parameters gives great results.
Of course, the textures must be in good resolutions and quality.
3K.
To deceive the operation of the denoisera you can render the image in 4K with AA gdid 2 it will give 4 stripes and a sharp image of even small details.
Then we reduce this image to 3000px and once again to 2000px.
Reducing will sharpen the image and improve AA.
